A product that needs a stable emulsion or fine particle size reduction will usually call for high shear mixing, while simple blending or keeping solids in suspension may only need an agitator. High shear mixers use a rotor-stator assembly to generate intense mechanical and hydraulic shear, breaking down agglomerates, reducing particle and droplet size and producing stable emulsions. Agitators and fluid mixers move product around the vessel more gently, which suits liquid blending, maintaining suspension, improving heat transfer and preventing solids from settling. Choosing between them depends on whether the product needs to be physically broken down or simply moved and combined — and on whether ingredients could be damaged by more aggressive processing.
